Highly resistant to cold weather, the white turnip with purple collar is sown in August for a harvest about 55 days after sowing. Its creamy white root with apparent purple collar looks like a top. The white flesh tastes better when the diameter of the root is between 5 and 8 cm. The roots can be harvested at a later stage, but it is best to do this after a few frosts to increase their sugar level and improve their flavor. Even with little maintenance, the root rich in vitamin C, iron and calcium will have crisp, sweet and juicy flesh. This turnip works wonders in soups, stews and purees. Its leaves, on the other hand, enhance the taste of salads and are worthy of spinach in recipes.

Great classic of French cuisine, this root vegetable grows quickly. It takes two months to harvest new small turnips and three months for winter turnips.
